As a Sushi Chef at Oishi 18, you will work as part of a skilled and multicultural kitchen team specializing in high-quality Japanese cuisine and sushi. Your main focus will be on preparing fresh, flavorful, and visually appealing dishes that meet the restaurants concept and quality standards.
Main responsibilities include:
Preparing various types of sushi: nigiri, maki, sashimi, uramaki, temaki, and specialty rolls.
Cooking and seasoning sushi rice and ensuring the correct texture and consistency.
Handling, cutting, and storing ingredients such as fish, seafood, vegetables, and other sushi fillings according to food safety and hygiene regulations.
Preparing workstations and kitchen tools before each shift (mise en place).
Collaborating with waitstaff and other kitchen team members during service.
Finishing and plating dishes in a visually appealing manner consistent with the restaurants presentation style.
Monitoring the quality of ingredients, managing inventory, and minimizing food waste.
Maintaining daily cleanliness, order, and hygiene throughout the kitchen.
Complying with food hygiene standards as required by a valid hygiene passport.
Assisting in training and guiding new staff members or trainees when needed.
Working efficiently and maintaining a positive attitude in a fast-paced environment.
